SALMON AND BACON SALAD
Here’s a delicious and healthy salad that will keep your calories in check....
Ingredients
- 2 salmon fillets, wild caught
- 3 thick cut slices bacon, cooked and chopped
- 4 cups baby arugula or mixed green
- 1 cup cherry tomatoes, cut in half
- 1 tbsp. avocado oil
- Sea salt and freshly ground black pepper
Creamy Avocado Dressing Ingredients
- 1 ripe avocado, coarsely chopped
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 garlic clove, minced
- 2 tbsp. chives
- Sea salt and freshly ground black pepper
Preparation
- Preheat grill to medium-high heat.
- Rub the salmon fillets with oil and season to taste.
- In a bowl, combine all the ingredients for the avocado dressing, season to taste and stir until creamy.
- Add the salmon to the grill and cook for 3 to 4 minutes per side or until desired doneness, then set aside.
- On two plates, add the arugula, tomatoes, and bacon.
- Cut salmon into bite-sized pieces.
- Add salmon to the salad and serve with the creamy avocado dressing.
