I N G R E D I E N T S
- 1.5kg diced chicken breast
- 1 large onion (or 2 small
- onions), finely chopped
- 2 red capsicums, finely
- chopped
- 2 x can diced tomatoes
- 2/3 cup tomato paste
- 3 teaspoons sugar
- Pinch of salt
- 2 mild chorizo sausages,
- thinly sliced
- 2 cups of frozen carrot,
- peas and corn mix
To Serve:
- 5 cups basmati rice
M E T H O D
- Peel and finely dice onion
- Chop up capsicum
- Place onion, capsicum, diced tomatoes, tomato paste, sugar and salt into slow cooker and mix well
- Place lid on slow cooker and cook for 3 hours on high
- Cut up chorizo into thin slices, and add to slow cooker
- Cook for another 20 minutes
- Add 2 cups of frozen carrot, corn and peas and cook for a further 10 minutes
- In the meantime, cook rice in rice cooker
- Serve rice with chicken stew on top
